Greek Shrimp Recipe



When I was making this Greek shrimp recipe for the first time, my daughter declared: “I will NOT like it!”

She changed her mind after the first bite and licked her plate clean.

As for the rest of the family, my son and I loved it too. My husband thought it was a bit “tomatoey” but ate it all and got seconds.


Ingredients :

  • 1.5-2 lbs raw shrimp peeled and deveined
  • 1 cup feta cheese, crumbled
  • 1.5 lbs tomatoes, chopped (about 3 cups)
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • ¼ cup fresh parsley, chopped finely
  • ¾ cup dry white wine
  • olive oil for frying
  • salt and pepper to taste

Directions:

  1. Preheat oven to 400 degrees F.

  2. Heat oil in a large skillet over medium heat. Add onions and sauté until soft. Add garlic, parsley and tomatoes and mix well. Cook on medium-low heat for approximately 15 minutes or until liquid is reduced. Add wine and cook for 10 more minutes until liquid is mostly reduced. Remove from heat. Season with salt and pepper to taste.

  3. Stir in shrimp and mix well. Place shrimp mixture in a baking dish and sprinkle with feta.

  4. Bake in the preheated oven for approximately 15 minutes or until shrimp is cooked through (pink).

Serving Suggestions :

We serve it with garlic rice and Greek salad.
