Beef Fajita Recipe



This beef fajita recipe is easy and quick to prepare. All you need to do is cut up the veggies and the meat and prepare the marinade. The cooking time is only 10 minutes and after that everyone at the table can spoon in their own fillings.

You can serve them with refried beans and Mexican rice or just on their own.


Ingredients :

  • 12 medium tortillas
  • 1 pound flank steak, cut in thin strips
  • 1 small red bell pepper, cut in thin strips
  • 1 small yellow bell pepper, cut in thin strips
  • 1 medium onion, cut in thin strips
  • 1 cup cheddar cheese for serving
  • olive oil for frying
  • sour cream and salsa for serving (optional)
Marinade:
  • 1/4 cup fresh lime juice
  • 1/3 cup water
  • 2 tablespoons olive oil
  • 4 cloves garlic, crushed
  • 2 teaspoons soy sauce
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Directions:

  1. In a large bowl mix the marinade ingredients. Add beef, mix well and marinade for at least 2 hours.

  2. In a large skillet heat olive oil. Stir fry the beef for about 4-5 minutes or until cooked through. Add onion and peppers and stir fry for 5 minutes longer.

  3. Warm up tortillas according to package directions

  4. Spoon meat filling into tortillas, sprinkle with cheddar cheese and add sour cream and salsa if desired. Roll tortillas and enjoy!
