Caesar Salad Recipe


If you’re tired of store bought dressing, you must try this rich and creamy Caesar salad recipe! It is easier to make than the original Caesar but just as good! You will not be disappointed!

If you’re short on time, you can opt to use store bought croutons.



Ingredients

  • 3 cloves garlic, minced
  • ¾ cup mayonnaise
  • 2 tablespoons half and half
  • 2 ½ teaspoons anchovy paste
  • 6 tablespoons grated Parmesan cheese, divided
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Bacon bits (optional)
  • 1 head romaine lettuce, torn into bite-size pieces

Croutons :

  • 4 tablespoons butter
  • 1 clove garlic, minced
  • 4 slices day old French bread, cut into small cubes

Directions

  1. In a small bowl combine garlic, mayonnaise, half and half, anchovy paste, 2 tablespoons of the Parmesan cheese, Worcestershire sauce, mustard, and lemon juice. Season to taste with salt and black pepper. Keep cool until ready to use.

  2. To make croutons preheat oven to 350 degrees F (175 degrees C). In a large pan melt butter over medium heat and add garlic. Cook and stir for about a minute making sure it does not burn. Remove from stove. Add bread cubes and toss to coat. Spread on a baking sheet and bake for about 15 minutes or until crispy and dry. Cool down.

  3. Place lettuce in a large bowl. Toss with dressing, remaining Parmesan cheese, and cooled bread cubes. Sprinkle with bacon bits if desired.
