Cauliflower Mashed Potatoes
Cauliflower mashed potatoes is a great recipe for people that are looking to reduce their carbohydrate intake. Although the name implies potatoes, there are none in this recipe. It’s all cauliflower.
I tried this side dish at a carb conscious friend’s house and I must admit that I quite enjoyed it. It is a nice change from the regular mashed potatoes.
Follow this recipe loosely, according to your own taste.
Ingredients
- 1 head cauliflower, cut up
- ½ cup cheddar cheese, shredded
- 1-2 cloves garlic, minced
- ¼ cup milk or cream
- Butter to taste
- Salt and pepper to taste
Directions
- Steam the cauliflower until soft.
- Put all ingredients in a blended or food processor and blend until mixed well.
- Enjoy!
