Chicken and Pasta Recipes


Chicken Pesto Florentine



Chicken Pesto Florentine is one of my favourite chicken and pasta recipes. The best part is, that the kids love it so much that they don't even notice spinach in it!


Ingredients

  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 skinless, boneless chicken breast halves - cut into thin strips
  • 2 cups fresh baby spinach leaves
  • 1 jar of Alfredo sauce of your choice
  • 2 tablespoons pesto
  • 1 (8 ounce) package dry penne pasta(or your favourite pasta)
  • 1 tablespoon grated Parmesan cheese

Directions:

  1. In a large pot of boiling water, cook pasta according to cooking times on the package.

  2. Heat oil in a large skillet over medium high heat. Add garlic, sauté for 1 minute; then add chicken and cook until almost cooked through. Add spinach and sauté all together for 3 minutes.

  3. Meanwhile, warm up Alfredo sauce in a pot. When warmed through take off the stove and stir in 2 tablespoons pesto; set aside.

  4. Add chicken and spinach mixture to pasta, and then stir in pesto/Alfredo sauce. Mix well and top with cheese.

Serving Suggestions :

Serve with fresh garlic bread and tossed salad.
