Chicken Enchilada Recipes
This is one of my family’s favourite chicken enchilada recipes. It is easy to prepare and the kids love it! You can spice it up by adding some chopped green chilli peppers.
Ingredients:
- 1 can condensed cream of chicken soup
- 1/2 cup sour cream
- 1 tablespoon butter
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red pepper, chopped
- 1 teaspoon chilli powder
- 2 ˝ cups chopped cooked chicken breast
- 8 medium tortillas
- 1 ˝ cups shredded Cheddar or Mexican cheese mix
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- Mix the soup and sour cream in a bowl, set aside.
- Melt butter in a pan over medium high heat. Add onion and garlic and sauté for couple of minutes. Add red pepper, chilli powder and continue to cook until tender. Stir in the chicken, 1/2 cup of cheese and 2 tablespoons of the soup mixture. Heat through.
- Spread 1/2 cup of the soup mixture in a baking dish. Spoon a bit more than 1/4 cup of the chicken mixture in the middle of each tortilla. Roll them up and place with the seam side down in the baking dish. Spoon remaining soup mixture on top, and sprinkle with remaining cheese.
- Bake in the preheated oven for 25-30 minutes.
Serving Suggestions:
Serve with tossed salad, salsa and guacamole.
