Chicken Taco Recipe

This chicken taco recipe is a great alternative to the more popular ground beef tacos.

My kids never complain when I serve tacos of any kind. They love putting them together!

Ingredients:

  • 1.5 lb chicken breasts, boneless, skinless
  • 1 tbsp. olive oil
  • 1 pkg. chicken taco seasoning
  • 8-12 hard taco shells or soft tortillas
  • lettuce, cut up
  • 1 tomato chopped
  • 1 cup cheddar cheese, shredded
  • toppings of your choice: sour cream, salsa, guacamole

Directions:

  1. Cut chicken breast into thin strips

  2. Heat oil in large skillet and cook chicken until cooked and no longer pink inside. Make sure to stir frequently. Drain any liquid. Stir in ½ cup water and seasoning and simmer for 5 minutes stirring often.

  3. Heat taco shells or tortillas according to the instructions on the package.

  4. Spoon chicken, lettuce, tomato, cheese and your favourite fixings into the shells.
