Corned Beef Hash Recipe

I use this corned beef hash recipe on days that we have breakfast for dinner. It is super easy and it goes well with eggs. But most of all my family loves it!

Ingredients:

  • 3 large potatoes, peeled and diced
  • 1 (12 oz) can corned beef, cut into chunks
  • 1 large onion, finely chopped
  • 1 cup beef broth

Directions:

  1. In a large skillet, combine all the ingredients.
  2. Cover and simmer over medium heat, until potatoes are soft, and the liquid is almost gone. Stir occasionally. Mix well, and serve.

Serving Suggestions:

This recipe is best served for “breakfast for dinner” with eggs and fresh fruit.
