Easy Chicken Fajitas Recipe



This is an easy chicken fajitas recipe.

All you need to do is cut up the meat and the veggies and prepare the marinade. And the cooking time is only 10 minutes.

My whole family loves the fajita dinners.

Kids think is really cool to spoon the fillings into tortillas and roll them up all by themselves.

You can serve them with refried beans and Mexican rice or just on their own.



Ingredients :

  • 12 medium tortillas
  • 4 chicken breasts halves, cut in thin strips
  • 1 small red bell pepper, cut in thin strips
  • 1 small yellow bell pepper, cut in thin strips
  • 1 medium onion, cut in thin strips
  • 1 cup cheddar cheese for serving
  • olive oil for frying
  • sour cream and salsa for serving (optional)
Marinade:
  • 1/4 cup lime juice
  • 1/3 cup water
  • 2 tablespoons olive oil
  • 4 cloves garlic, crushed
  • 2 teaspoons soy sauce
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste

Directions:

  1. In a large bowl mix the marinade ingredients. Add chicken strips, mix well and marinade for at least 2 hours.

  2. In a large skillet heat olive oil. Stir fry the chicken for about 4-5 minutes or until cooked through. Add onion and peppers and stir fry for 5 minutes longer.

  3. Warm up tortillas according to package directions

  4. Spoon meat filling into tortillas, sprinkle with cheddar cheese and add sour cream and salsa if desired. Roll tortillas and enjoy!
