Frittata Recipe



I use this frittata recipe for “Breakfast for Dinner” kind of days. It is easy ,tasty and most of all versatile.

You can use bacon or ham instead of sausage and experiment with different vegetables like tomatoes, onion, mushrooms or spinach.


Ingredients

  • 6 eggs
  • ¾ cup milk
  • 2 tablespoons butter, melted
  • ¼ cup chopped green onions
  • ½ red pepper, chopped
  • sausage of your choice (small link), sliced
  • 1 cup shredded Cheddar cheese
  • ¼ cup real bacon bits
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350 degrees F

  2. In a skillet over medium-low heat sauté red pepper in olive oil for 3-5 minutes.

  3. In a bowl, beat eggs, milk, butter, salt and pepper. Add red pepper.

  4. Grease 9 inch round baking dish and place sausage at the bottom. Pour egg mixture over sausage. Sprinkle with onions, bacon and cheese. Bake, uncovered for 30-35 minutes or until a knife inserted in the center comes out clean.
