Greek Pasta Salad Recipe
I got this Greek pasta salad recipe from a barbeque I went to few years ago. It requires some chopping but it makes a great dinner side dish or a potluck dish.
I like to serve it in the summer time with souvlaki or grilled meat.
Ingredients
- ½ cup olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- pepper to taste
- ½ -1 teaspoon white sugar to taste
- 2 ½ cups rotini pasta, cooked
- 1 can (10 ounces) artichoke hearts, drained and chopped
- 16 cherry tomatoes, halved
- ½ cup red bell peppers, sliced
- ½ cup yellow bell peppers, sliced
- 1 cup feta cheese, crumbled
- 1 small red onion, chopped
- 1 (4 ounce) can black olives
Directions
- In a large bowl mix vinegar, olive oil, spices and sugar. Add all the remaining ingredients and toss to coat. Refrigerate covered for at least 2 hours but preferably overnight.
