Greek Pasta Salad Recipe


I got this Greek pasta salad recipe from a barbeque I went to few years ago. It requires some chopping but it makes a great dinner side dish or a potluck dish.

I like to serve it in the summer time with souvlaki or grilled meat.


Ingredients

  • ½ cup olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • pepper to taste
  • ½ -1 teaspoon white sugar to taste
  • 2 ½ cups rotini pasta, cooked
  • 1 can (10 ounces) artichoke hearts, drained and chopped
  • 16 cherry tomatoes, halved
  • ½ cup red bell peppers, sliced
  • ½ cup yellow bell peppers, sliced
  • 1 cup feta cheese, crumbled
  • 1 small red onion, chopped
  • 1 (4 ounce) can black olives

Directions

  1. In a large bowl mix vinegar, olive oil, spices and sugar. Add all the remaining ingredients and toss to coat. Refrigerate covered for at least 2 hours but preferably overnight.
