Greek Potatoes

I first tried Greek potatoes when I worked at a Greek restaurant. Since they would not divulge their “secrets” I have been on a hunt for a perfect recipe. I have tried many and finally made my own version that my family loves.


Ingredients

  • 4-6 potatoes cut into wedges
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • ¼ cup freshly squeezed lemon juice
  • ½ cup chicken stock
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • pepper to taste

Directions

  1. Preheat oven to 450 degrees F
  2. Arrange potatoes evenly in the bottom of a baking dish

  3. In a bowl, mix all the remaining ingredients.

  4. Pour the mixture over the potatoes. Cover, and bake in the preheated oven for 45 minutes-1 hour turning occasionally, until tender. (I usually turn them every 15 minutes) Do not overcook as they will fall apart.

  5. Check frequently at the end of cooking time to make sure the liquid is not completely absorbed. If that happens add a splash of water or water mixed with chicken stock to the baking dish. This will prevent burning.
