Greek Potatoes

I first tried Greek potatoes when I worked at a Greek restaurant. Since they would not divulge their “secrets” I have been on a hunt for a perfect recipe. I have tried many and finally made my own version that my family loves.
Ingredients
- 4-6 potatoes cut into wedges
- 1/3 cup olive oil
- 3 cloves garlic, minced
- ¼ cup freshly squeezed lemon juice
- ½ cup chicken stock
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- pepper to taste
Directions
- Preheat oven to 450 degrees F
- Arrange potatoes evenly in the bottom of a baking dish
- In a bowl, mix all the remaining ingredients.
- Pour the mixture over the potatoes. Cover, and bake in the preheated oven for 45 minutes-1 hour turning occasionally, until tender. (I usually turn them every 15 minutes) Do not overcook as they will fall apart.
- Check frequently at the end of cooking time to make sure the liquid is not completely absorbed. If that happens add a splash of water or water mixed with chicken stock to the baking dish. This will prevent burning.
