Grilled Chicken Salad Recipes


Caesar Chicken Salad


The Caesar is definitely one of my favourite grilled chicken salad recipes. It is a perfect dinner meal on a hot summer day. Even my kids eat it without a fuss!


Ingredients:

  • 4 boneless skinless chicken breasts
  • 4 Tbsp olive oil
  • 4 Tbsp lemon juice
  • 2-3 cloves garlic, minced
  • 1 clove garlic, cut in half
  • ΒΌ cup Caesar Dressing
  • 6 cups romaine lettuce, torn into pieces
  • 3 Tbsp. Parmesan cheese, grated
  • 4 slices thick French bread
  • 1 Tbsp. olive oil
  • Salt and pepper to taste

Directions:

  1. Prepare marinade by mixing olive oil, lemon juice, minced garlic, salt and pepper. Place chicken in marinade in resealable plastic bag. Seal bag and turn to coat chicken. Marinade for minimum of 30 minutes.

  2. Remove chicken from marinade and grill until no longer pink inside. Add bread slices to barbeque and grill till toasted on both sides. Rub toast with garlic and lightly brush with oil.

  3. Mix lettuce with salad dressing and arrange on plate. Top with chicken and toast and serve.
