Mexican Casserole with Ground Beef
This is one of the best ground beef casserole recipes that I have tried. I believe one of my friends gave it to me a few years ago and it became a staple in my house.
It is Mexican inspired and it can be easily adjusted to individual taste.
My kids love it and always gobble it up but I have to use mild ingredients as they will not eat spicy foods.
It serves at least 6 or 4 with plenty of leftovers for lunch the next day!
Ingredients:
- 1 ½ pound ground beef
- Olive oil for frying
- 3 garlic cloves, minced
- ½ cup onion, minced
- 2 cups salsa
- ½ packet Taco seasoning
- ½ cup water
- 1 (16 ounce) can black beans, drained
- 1 (10 ounce) can corn, drained
- 1 ½ cups tortilla chips, lightly crushed
- 2 cups sour cream
- 1 (2 ounce) can sliced black olives, drained
- ½ cup green onion, chopped
- ½ cup fresh tomato, chopped
- 2 cups Mexican style or Cheddar cheese, shredded
Directions:
- Preheat oven to 350 degrees F (175 degrees C).
- In a large skillet over medium high heat, sauté onion and garlic in olive oil for couple of minutes. Add ground beef and cook until no longer pink. Stir in taco seasoning, water and salsa, reduce heat, and simmer 20 minutes, or until liquid is absorbed. Stir in beans and corn, heat through.
- Spray a 9x13 baking dish with cooking spray. Spread crushed tortilla chips in dish, and then spoon beef mixture over chips. Spread sour cream over beef, and sprinkle olives, green onion and tomato over the sour cream. Top with Cheddar cheese.
- Bake in preheated oven for 25 minutes, or until hot and bubbly
Note
If you want your tortilla chips crunchy, place them at the top of the casserole and cover with only cheese.
