Ground Beef Enchiladas
My daughter absolutely loves ground beef enchiladas. We just had them yesterday for dinner, today for lunch and she wanted them again for dinner.
Lucky for her, the rest of the family likes them too and we can have them again soon!
Ingredients :
Sauce:
- 3 cups (750 ml) tomato sauce
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 2 tsp chilli powder
- 1 tbsp green chillies, chopped (or more to taste)
- salt and pepper to taste
- olive oil for frying
Filling :
- 1 pound ground beef
- 1 small onion, chopped
- ½ red pepper, chopped
- 3 cloves garlic, crushed
- salt and pepper to taste
- 8 tortillas
- 1 cup cheddar cheese, shredded, divided
- sour cream to serve
Directions :
- Preheat oven to 350 degrees F
Make the sauce:
- Heat oil in a skillet, sauté onion and garlic for few minutes until tender.
- Add tomato sauce, chilli powder, green chillies, salt and pepper. Mix well and remove from heat.
Make the filling:
- Heat oil in skillet and brown beef with red pepper, onion and garlic until beef is cooked through. Drain excess grease.
- Remove from heat and stir in ½ cup cheese and ¾ cup sauce.
- Spoon beef mixture into each tortilla and roll them up. Place ready tortillas seam down, in an ungreased baking dish (13x9- inch). Pour remaining sauce over the tortillas, cover the dish and bake for 20 minutes.
- Uncover the dish and sprinkle the remaining cheese over the enchiladas.
- Bake for 10 more minutes or until cheese is melted.
Serving Suggestions :
Serve with sour cream, Spanish rice and, or refried beans.
