Manicotti Recipe
This manicotti recipe is very cheesy and tasty. It makes more than 4 servings so you will have left overs for lunch the next day.
Ingredients:
- Olive oil for cooking
- 1 cup sliced mushrooms
- 3 garlic cloves, minced
- 2 eggs
- 1 pkg frozen, chopped spinach, thawed and drained
- 1.5 cup Mozzarella cheese, shredded
- 1 container cottage cheese (500 g)
- 1/3 cup Parmesan cheese, grated
- 1 pkg. manicotti shells (14 shells)
- 2 cups of your favourite tomato pasta sauce
Directions:
- Cook manicotti according to package directions
- Preheat oven to 350 degrees F
- Heat olive oil in large non stick skillet. Add mushrooms and garlic and cook on medium heat for 5 min, stirring frequently. Remove from stove.
- Beat eggs lightly in bowl. Add mushrooms, spinach, cottage cheese, half of mozzarella and half of Parmesan cheeses. Mix till blended well. Add salt and pepper to taste. Spoon gently into the cooked manicotti shells.
- Spray 13X9 baking dish with cooking spray. Placed stuffed manicotti into the dish, cover with pasta sauce.
- Bake in the oven for 30 minutes. Remove from oven and sprinkle with remaining Mozzarella and Parmesan cheeses. Bake for 10 more minutes until cheese is melted.
Serving Suggestions:
Serve with salad and garlic bread.
