Oven Roast Beef Recipes



Roast Beef with Gravy and Yorkshire Pudding



This meal is my husband's favourite dinner so I felt the need to research a lot of oven roast beef recipes.

What I had the hardest time with, was Yorkshire pudding. I just could not get it right. My husband used to call my Yorkies "pucks".

Then one of my friends came to the rescue and gave me the best Yorkshire recipe. They turn out every time and they are nice and big.




Ingredients:

  • 1.5-2 lbs beef roast of your choice. (I buy Sirloin Tip)
  • 3 garlic cloves cut in slivers
  • Salt and pepper to taste
Yorkshire pudding:
  • 60 ml olive oil
  • 2 cups milk
  • 2 cups flour
  • 4 eggs
Gravy:
  • 1 cup beef broth
  • ¼ cup red cooking wine (optional)
  • Garlic powder to taste

Directions:

  1. Preheat over to 350 degrees F

  2. With a sharp knife make cuts in the roast and insert garlic slivers into openings. Sprinkle salt and pepper over roast.

  3. Place on a rack, in a roasting pan and insert meat thermometer into the thickest part of the roast. Bake until desired doneness is achieved.

    Remove from oven, cover and let it rest for 10 minutes before slicing.

  4. While roast is in the oven prepare Yorkshire pudding mix:

    Place eggs and milk in the mixer and blend, add flour one cup at a time and blend it all well.

  5. Once roast is out of the oven, increase oven temperature to 425 degrees F. Place a teaspoon of olive oil in 12 cup muffin pan and place in preheated oven for approximately 5-10 minutes or until oil is starting to smoke.

    Remove pan from oven and pour mixture into cups until almost filled (just over ¾ full). Place back in the oven and bake for approximately 30 minutes or until nice and golden.

    Do not open oven door while the Yorkshire pudding is baking.

  6. To make gravy, put the drippings from the pan in a small pot and add a cup of beef broth, about ¼ cup of red cooking wine, garlic powder and a table spoon of cornstarch mixed with ¼ cup cold water. Whisk it all together, bring to boil and simmer on low heat until thickened.
