Pork Tenderloin with Apples
I got this recipe from a good friend and it quickly became one of our favourite pork tenderloin recipes. I hope your family enjoys it as much as we do!
Ingredients:
- 1 large or 2 small pork tenderloins(1.5 lb)
- 3 apples
- 1/3 cup flour
- 1 cup apple juice
- 1/4 cup lemon juice
- 1/4 tsp. rosemary
- 1/4 tsp. thyme
- salt and pepper to taste
- olive oil for frying
Directions:
- Peel, core and slice apples.
- Heat oil in skillet and cook apple slices on medium heat until tender. Remove from skillet and keep warm.
- Cut tenderloin into thin slice about ½ inch thick. Using meat mallet, pound them thinner. Sprinkle with salt and pepper to taste.
- Coat meat with flour on both sides.
- Cook cutlets in the same skillet until browned on both sides and cooked through. Remove and keep warm.
- Add juices and herbs to the pan, bring to boil and cook for few minutes on medium heat.
- Place apples over pork and pour sauce over it.
Serving Suggestions:
We like it with mashed potatoes and salad.
