Recipe for Crepes


This is my family’s favourite recipe for crepes. We have crepes for dessert or as part of our “Breakfast for Dinner” tradition.

My kids especially enjoy them with strawberry or blueberry compote and icing sugar but you can cover them or stuff them with just about anything you want! Some suggestions include: Blueberries, strawberries, peaches, cottage cheese, jam, cream cheese or just plain maple syrup.


Ingredients

  • 2 eggs
  • 1 cup milk
  • 2/3 cup all-purpose flour
  • pinch salt
  • 1 tablespoon sugar
  • 1/2 teaspoon vanilla
  • 1 1/2 teaspoons olive oil

Directions

  1. Combine eggs, milk, flour, salt, sugar and oil in a blender. Process until smooth. Make sure the batter is runny.
  2. Heat skillet over medium-high heat and spray with oil or Pam. Make sure the oil is hot and pour about 1/4 cup of batter into skillet, tilting the skillet so that bottom surface is evenly coated. Cook 1-2 minutes per side or until golden. Repeat with remaining batter.
  3. Stuff of cover with your choice of ingredients as suggested above.
