Recipe for Shepherds Pie
This recipe for shepherds pie is my family’s favourite.
My kids love it mainly because of the melted cheese on top.
It is a great one dish meal that is quite versatile.
You can remove the vegetables that you don’t like or add more of your favourites.
Same goes for spices.
Also you can experiment with different kinds of cheeses or forget the cheese altogether.
Ingredients :
- 1 lb ground beef
- 4 large potatoes
- 1 medium onion, chopped
- ¾ cup frozen corn
- ¾ cup frozen peas
- 2 carrots, cut in small cubes
- 2 green onions, chopped
- 4 garlic cloves, minced, divided
- 2 tbsp flour
- 1 tbsp Worcestershire sauce
- 2 tsp dry beef stock mix
- 1 tbsp ketchup
- 2 tbsp sour cream
- ½ cup milk
- ¾ cup cheddar cheese, shredded and divided
- ¼ cup water
- 1 tbsp butter
- olive oil
Directions :
- Boil or steam potatoes until tender. Do not overcook. Drain and mash. Mix in butter, green onion, 1 clove of minced garlic, ¼ cup shredded cheese, milk, sour cream, salt and pepper. Set aside.
- Steam carrots until tender but still firm. Preheat oven to 375 degrees F (190 degrees C.)
- Heat olive oil in a large frying pan. Add onion and the remaining garlic. Cook until soft. Add ground beef and cook until browned. Drain off excess fat, then stir in flour and cook for approximately 1 minute. Add ketchup, Worcestershire sauce, beef stock, water, corn, peas, and carrots. Season with salt and pepper to taste and simmer for about 5 minutes.
- Spread the ground beef in an even layer on the bottom of an 8X8 baking dish. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
- Bake in the preheated oven for about 25 minutes or until cheese is bubbly and lightly browned.
