Pork Shish Kabobs

These pork shish kabobs are easy, tasty and colourful.

My kids love them even though they will not eat onions or zucchini.

You can use pork, chicken or beef. My favourite is the chicken.

They are best prepared on barbeque or indoor grill, but can also be done in the oven.

Taste of summer any time of the year!

Ingredients :

  • 1.5 lb pork tenderloin, cubed
  • 1 cup (250ml) Italian salad dressing
  • 1 small zucchini cut in chunks
  • 1 red pepper cut in chunks
  • 1 yellow pepper cut in chunks
  • 1 small red onion cut in chunks
  • approx.20 small mushrooms or 10 large mushrooms cut in half
  • wooden skewers

Instructions :

  1. Place meat in a bowl and marinade in Italian dressing for at least 2-3 hrs. or overnight.

  2. Soak wooden skewers in warm water for an hour or longer

  3. Alternate meat and vegetables onto the skewers. Brush the vegetables with remaining marinade and grill until done.

Serving Suggestions:

Serve with garlic rice and salad.
