Sole Recipes


Sole with Shrimp



This is one of my kids’ favourite sole recipes. Even my husband, who does not like fish, will eat it.



Ingredients :

  • 2 tablespoons onion, minced
  • 1 cup small shrimp, cooked
  • 1 tsp dried parsley
  • 2-3 cloves garlic, minced
  • salt and pepper to taste
  • 6 large crackers, crushed
  • 4-8 sole fillets, depending on size
  • 1 tablespoon lemon juice
  • 2 tbsp grated Parmesan cheese
  • 2 tbsp butter, melted
  • 2 tbsp butter or olive oil

Directions :

  1. Preheat oven to 375 degrees F. Lightly grease a 9x13 inch baking pan.

  2. Melt butter in frying pan over medium heat (or use olive oil instead). Add onion and garlic. Sauté for 1 minute. Stir in shrimp, parsley, salt and pepper and mix together. Remove from heat and stir in crushed crackers.

  3. Place fillets in baking pan, sprinkle with salt and pepper to taste and spread shrimp mixture on top. Sprinkle with Parmesan cheese. Mix lemon juice with melted butter and drizzle over fish.

  4. Bake in preheated oven for 15 minutes or until fish is easily flaked with a fork.

Serving Suggestions :

Serve with garlic rice and side of vegetables.
