Stuffed Chicken Recipes


Chicken with Sundried Tomatoes and Feta



This is not one of my favourite stuffed chicken recipes but my kids loved it, so I kept it on the menu. Don’t get me wrong. I think dish is quite tasty but I am not a huge fan of feta-chicken combination.


Ingredients:

  • 4 skinless, boneless chicken breast halves
  • ¾ cup feta cheese, crumbled
  • 2 tbsp sundried tomatoes, chopped
  • 1 tsp basil
  • ½ cup seasoned bread crumbs
  • 1 egg, whisked
  • 2 tbsp butter, melted

Directions:

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.

  2. Mix feta, basil and sundried tomatoes in a bowl. Place bread crumbs and egg in two separate flat dishes.

  3. With a sharp knife, cut a "pocket" in each chicken breast

  4. Stuff chicken with feta mixture and roll in egg and bread crumbs.

  5. Arrange chicken in the baking dish. Drizzle with melted butter.

  6. Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
