Stuffed Chicken Recipes
Chicken with Sundried Tomatoes and Feta
This is not one of my favourite stuffed chicken recipes but my kids loved it, so I kept it on the menu. Don’t get me wrong. I think dish is quite tasty but I am not a huge fan of feta.
Ingredients:
- 4 skinless, boneless chicken breast halves
- ¾ cup feta cheese, crumbled
- 2 tbsp sundried tomatoes, chopped
- 1 tsp basil
- ½ cup seasoned bread crumbs
- 1 egg, whisked
- 2 tbsp butter, melted
Directions:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- Mix feta, basil and sundried tomatoes in a bowl. Place bread crumbs and egg in two separate flat dishes.
- With a sharp knife, cut a "pocket" in each chicken breast
- Stuff chicken with feta mixture and roll in egg and bread crumbs.
- Arrange chicken in the baking dish. Drizzle with melted butter.
- Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
