Veal Parmesan
This is my favourite recipe for Veal Parmesan.
Ingredients:
- 4 slices of veal (leg scallopini or cutlets)
- ½ C bread crumbs
- 1 egg
- 1Tbs olive oil
- ¼ C shredded mozzarella cheese
- 2 Tbs tomato sauce
Directions:
- Preheat the oven to 400 degrees F
- Place parmesan and bread crumbs on separate plates. In a bowl beat the egg with a tablespoon or two of water.
Coat the veal with parmesan, then dip in egg mixture and then the bread crumbs.
- In a non stick skillet heat the oil on moderate heat.
Sauté the veal approximately 2 minutes per side. Move the veal onto a baking sheet, spoon the tomato sauce on top and sprinkle with mozzarella cheese.
- Bake for 10 minutes or until veal is cooked through.(Cooking time is based on thickness of veal slice)
Serving Suggestions:
I like to serve this dish with pasta and steamed asparagus.
