Veal Parmesan


This is my favourite recipe for Veal Parmesan. It is easy to make and the whole family loves it!


Ingredients:

  • 4 slices of veal (leg scallopini or cutlets)
  • ½ cup bread crumbs
  • ½ cup Parmesan cheese
  • 1 egg
  • olive oil
  • ¼ cup shredded mozzarella cheese
  • 2 tablespoons tomato sauce

Directions:

  1. Preheat the oven to 400 degrees F

  2. Place parmesan and bread crumbs on separate plates. In a bowl beat the egg with a tablespoon or two of water. Coat the veal with parmesan, then dip in egg mixture and then the bread crumbs.

  3. In a non stick skillet heat the oil on moderate heat. Sauté the veal approximately 2 minutes per side. Move the veal onto a baking sheet, spoon the tomato sauce on top and sprinkle with mozzarella cheese.

  4. Bake for 10 minutes or until veal is cooked through.(Cooking time is based on thickness of veal slice)

Serving Suggestions:

I like to serve this dish with pasta and steamed asparagus.
